Tenuta Donna Olimpia 1898 features a modern cellar of 5000 m², designed in a perspective of energy saving and minimal environmental impact, in order to reduce waste and harmful emissions to the territory. The cellar is equipped with the best available manufacturing technology (automatic pumping over and temperature control, cold pre-maceration). The wine refinement takes place in French oak barrels. The barrique cellar is certainly the most important and fascinating room of the estate. In order to enhance, expand and complete the winery, the illumination is achieved entirely with LEDs. The appliances are wisely disguised in the ceiling, creating a pleasant effect of soft lighting, with different intensities depending on the needs and the time of day.
